There's something endearing about the intimacy of a B&B. The (hopefully charming) host, the chance to mingle with other guests, the free breakfast. But they've also gotten a bad rap (we're looking at you lace doilies). A new generation of hoteliers are updating those old formulas, creating inns that serve as local hangouts, plugging guests into a destination in a more organic way than traditional boutique hotels.
